Gingernut and Mango Parfait

Ingredients

1 packet Leda Gingernut Biscuits
400 ml vanilla coconut yoghurt
1 mango, diced
2 passionfruit
Fresh mint leaves, to garnish

Method

Place Leda Gingernut biscuits between two sheets of baking paper.
Using a rolling pin, crush biscuits into small pieces.
In four serving glasses, assemble layers of Gingernut crumb, coconut yoghurt, mango, and passionfruit pulp, finishing with a sprinkle of biscuit crumbs.
Top with fresh mint.
