Acai Smoothy Bowl with Cookie Crumb Granola
Smoothie bowl topped with fresh fruit and the cookie crumb granola.
1 banana sliced, frozen
200g frozen mixed berries
200g frozen Acai puree, slightly thawed
1/2 cup coconut yogurt
1/2 cup of apple juice
Assorted fresh toppings such as, berries, sliced banana, chia seeds
8 Leda ANZAC Biscuits
60g pumpkin seeds (pepitas)
30g shredded coconut
Cookie Crumb Granola
Preheat oven to 180°C.
Spread the almonds, pumpkin seeds and coconut in a single layer on a baking tray.
Toast for five to ten minutes, or until slightly browned.
Allow to cool then transfer to a food processor.
Add the ANZAC biscuits and pulse to form a course crumb.
Transfer to an airtight jar or container to store.
Place the frozen banana, frozen mixed berries, acai puree, coconut yogurt, and half the apple juice into a blender or food processor.
Blend until smooth adding the remaining apple juice as required.
Divide the smoothie into two bowls and top with cookie crumb granola and assorted fresh toppings and serve.
