Choc Minton Ice Cream Jars

Ingredients

500 ml dairy-free coconut ice cream, softened
1 packet Leda Minton Biscuits
60 g dark chocolate, 70% cocoa, dairy-free
60 ml coconut milk
1 tbsp rice malt syrup
1/4 tsp vanilla extract
Fresh mint leaves, to garnish

Method

Place Leda Minton Biscuits between two sheets of baking paper and crush into small pieces using a rolling pin. Divide the crushed biscuits into equal portions and set aside.

Dark Chocolate Sauce

In a small saucepan, combine dark chocolate, coconut milk, rice malt syrup, and vanilla extract.
Heat over low heat, stirring constantly until the chocolate melts and the sauce becomes smooth and glossy.
Remove from heat and allow the sauce to cool to room temperature.

Choc Minton Ice Cream

In a large mixing bowl, add the softened coconut ice cream and fold in one portion of the crushed Minton biscuits.

Assemble Jars

Using the remaining crushed biscuits, layer with the ice cream mixture and chocolate sauce until the jars are filled, finishing with a drizzle of chocolate sauce.
Top with fresh mint.
