Arrowroot Biscuit Log
1 x 205g packet Leda Arrowroot Biscuits
1 cup cashews, lightly toasted
½ cup coconut oil, melted
2 tbsp cacao powder
3 tbsp rice malt syrup
¼ cup LSA (ground linseed, sunflower seeds & almonds)
3 tbsp water
Process cashews nuts into smaller crumbs in a food processor, then add the rest of ingredients and process until well incorporated.
Wrap in cling wrap and form into the shape of a log about 3cm diameter and refrigerate for 15-20 mins to set.
Unwrap the log and slice it gently into equal size cylinders, about 1cm thick.
Tip: Garnish with cacao and finely grated dairy-free chocolate.
